Healthy Recipe! (Kinda) Thanksgiving Stuffing Recipe!! Enjoy!

 
 
You can prepare your Thanksgiving stuffing in a Crock Pot to save room in your busy oven on Thanksgiving day. And you can prepare a parve Thanksgiving stuffing so your vegetarian guests can also enjoy this delicious mix of toasted bread cubes, vegetables and spices. This recipe for kosher parve Crock Pot Stuffing tastes like it was cooked in the turkey, but it is actually prepared separately in the slow cooker.

Prep Time: 20 minutes

Cook Time: 4 hours

Total Time: 4 hours, 20 minutes

Ingredients:

  • 14-16 pieces of toasted bread, cut into cubes
  • 3.5 ounces (100 grams) pareve margarine
  • 2 large onions, chopped
  • 2 1/2 cups chopped celery
  • 16 ounces canned sliced mushrooms
  • 1/4 cup chopped fresh parsley
  • 1 teaspoons salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 cups chicken broth (use 4 tsp. parve chicken soup powder in 4 cups boiling water)
  • 2 eggs, beaten

Preparation:

1. Lay bread on cookie sheet and toast in the oven until just crisp. Cool and cut into cubes. Place in Crockpot.
2. Melt margarine in a skillet. Saute onion and celery until beginning to soften. Add mushrooms and parsley. Cook, stirring frequently, until vegetables are heated through. Season with salt and pepper.
3. Mix the vegetables with the bread cubes in the Crockpot. Mix in beaten eggs. Pour chicken broth over the bread and vegetables.
4. Cover. Cook in high for 30 minutes. Lower temperature to low, and cook for 3-4 hours.

Variation: For extra turkey flavor, take the neck from your turkey and cook it in the Crockpot with the stuffing.

Ingredients

  • 1 cup butter, softened
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons hot water
  • 1/2 teaspoon salt
  • 2 cups semisweet chocolate chips
  • 1 cup chopped walnuts

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto ungreased pans.
  3. Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.

  • 3 avocados - peeled, pitted, and mashed
  • 1 lime, juiced
  • 1 teaspoon salt
  • 1/2 cup diced onion
  • 3 tablespoons chopped fresh cilantro
  • 2 roma (plum) tomatoes, diced
  • 1 teaspoon minced garlic
  • 1 pinch ground cayenne pepper (optional)

Directions

  1. In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.

  • 2 cups all-purpose flour
  • 2 cups white sugar
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 cup unsweetened cocoa powder
  • 1 pinch salt
  • 2/3 cup shortening
  • 2 cups boiling water
  • 2 eggs, beaten
  • 2 teaspoons vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Sift together the flour, sugar, baking soda, baking powder, cocoa and salt. Set aside.
  2. Melt the shortening in the boiling water, then stir into the flour mixture until blended. Beat in the eggs, then stir in the vanilla.
  3. Pour batter into prepared pan. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

A delicious salsa recipe made with fresh ingredients.

Ingredients:

  • 3 tablespoons finely chopped onion
  • 2 small cloves garlic, minced
  • 3 large ripe tomatoes, peeled and seeds removed, chopped
  • 2 hot chile peppers, Serrano or Jalapeno, finely chopped
  • 2 to 3 tablespoons minced cilantro
  • 1 1/2 to 2 tablespoons lime juice
  • salt and pepper

Preparation:

Put chopped onion and garlic in a strainer; pour 2 cups boiling water over them then let drain throughly. Discard water. Cool. Combine onions and garlic with chopped tomatoes, peppers, cilantro, lime juice, salt, and pepper. Refrigerate for 2 to 4 hours to blend flavors.
Makes about 2 cups of salsa.

  • 1 egg
  • 1 tablespoon all-purpose flour
  • 3/4 cup white sugar
  • 1/2 teaspoon salt
  • 1 1/2 cups pumpkin puree
  • 1 1/2 cups evaporated milk
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons light corn syrup
  • 1 (9 inch) unbaked pie crust

Directions

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. Add the sugar gradually to the pumpkin puree. Beat well an stir in the flour, salt and spices. Stir in the corn syrup and beat well. Stir in the slightly beaten egg, then slowly add the evaporated milk, mixing until well blended. Pour the batter into the unbaked pie shell.
  3. Bake at 450 degrees F (230 degrees C) for 10 minutes then reduce the oven temperature to 325 degrees F (165 degrees F) and continue baking pie for an additional 30 minutes or until a knife inserted into the mixture comes out clean.

Ingredients

  • 2 (.25 ounce) envelopes active dry yeast
  • 1/4 cup warm water (105 to 115 degrees)
  • 1 1/2 cups lukewarm milk
  • 1/2 cup white sugar
  • 1 teaspoon salt
  • 2 eggs
  • 1/3 cup shortening
  • 5 cups all-purpose flour
  • 1 quart vegetable oil for frying
  •  
  • 1/3 cup butter
  • 2 cups confectioners' sugar
  • 1 1/2 teaspoons vanilla
  • 4 tablespoons hot water or as needed

Directions

  1. Sprinkle the yeast over the warm water, and let stand for 5 minutes, or until foamy.
  2. In a large bowl, mix together the yeast mixture, milk, sugar, salt, eggs, shortening, and 2 cups of the flour. Mix for a few minutes at low speed, or stirring with a wooden spoon. Beat in remaining flour 1/2 cup at a time, until the dough no longer sticks to the bowl. Knead for about 5 minutes, or until smooth and elastic. Place the dough into a greased bowl, and cover. Set in a warm place to rise until double. Dough is ready if you touch it, and the indention remains.
  3. Turn the dough out onto a floured surface, and gently roll out to 1/2 inch thickness. Cut with a floured doughnut cutter. Let doughnuts sit out to rise again until double. Cover loosely with a cloth.
  4. Melt butter in a saucepan over medium heat. Stir in confectioners' sugar and vanilla until smooth. Remove from heat, and stir in hot water one tablespoon at a time until the icing is somewhat thin, but not watery. Set aside.
  5. Heat oil in a deep-fryer or large heavy skillet to 350 degrees F (175 degrees C). Slide doughnuts into the hot oil using a wide spatula. Turn doughnuts over as they rise to the surface. Fry doughnuts on each side until golden brown. Remove from hot oil, to drain on a wire rack. Dip doughnuts into the glaze while still hot, and set onto wire racks to drain off excess. Keep a cookie sheet or tray under racks for easier clean up.

Sangria Recipe !! Enjoy and be merry !




Prep time is about ten minutes.  Yields 1 to 1 1/2 quarts.

Ingredients

  • 1 (750-ml) bottle red wine
  • 1/4 cup brandy
  • 1/4 cup orange flavored liqueur (recommended: triple sec or Grand Marnier)
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh orange juice
  • 1/4 cup sugar
  • 1/2 orange, thinly sliced
  • 1/2 lemon, thinly sliced
  • 1 unwaxed apple, cored, and cut into thin wedges
  • 1 (750-ml) bottle sparkling water, chilled

Directions

Combine everything but the sparkling water in a large plastic container or glass pitchers. Cover and chill completely, 1 to 2 hours. When ready to serve, add the sparkling water.

Ingredients

  • 12 1/2 ounces bittersweet chocolate, chopped
  • 1/8 cup unsalted butter
  • 12 egg yolks
  • 1/4 cup white sugar
  • 12 egg whites
  • 1/8 cup white sugar
  • 1 1/4 cups heavy cream
  • 1 tablespoon unsweetened cocoa powder, for dusting

Directions

  1. Preheat oven to 300 degrees F (150 degrees C). Butter a 9 inch springform pan, and line bottom with parchment paper.
  2. In the top of a double boiler, heat chocolate and unsalted butter, stirring occasionally, until chocolate is melted and smooth. Remove from heat and allow to cool to lukewarm.
  3. In a large bowl, beat egg yolks and 1/4 cup sugar until thick and lemon-colored. Fold into chocolate mixture; set aside. In a large glass or metal mixing bowl, beat egg whites until foamy. Gradually add 1/8 cup sugar, continuing to beat until stiff peaks form. Fold 1/3 of the whites into the chocolate mixture, then quickly fold in remaining whites until no streaks remain. Pour 2/3 of mixture into prepared pan.
  4. Bake in the preheated oven for 40 minutes, or until filling is just firm in the center. Allow to cool, then remove from pan and refrigerate 1 hour.
  5. In a medium bowl, whip cream to soft peaks and fold into remaining chocolate mixture. Cover and refrigerate.
  6. Spread remaining mousse over cooled cake and dust with cocoa.

Ingredients

  • For the chipotle crema:
  • 1 cup sour cream
  • 2 teaspoons pureed canned chipotle chiles in adobo
  • 1/4 teaspoon kosher salt
  • 2 pounds tilapia
  • 1/4 cup canola oil
  • 1 tablespoon ancho chile powder
  • 2 teaspoons kosher salt
  • 8 6-inch corn tortillas
  • 1/4 head of red cabbage, finely shredded
  • 1 medium white onion, halved and thinly sliced
  • Fresh cilantro leaves
  • Salsa Fresca
  • Lime wedges
  •  
  • Type of fire: direct
  • Grill heat: medium-high

Procedures


  1. 1
    To make the chipotle cream, whisk together the sour cream, chipotle puree, and 1/4 teaspoon salt in a small bowl. Refrigerate for at least 15 minutes or up to 1 day before serving.

    Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over entire surface of coal grate. Set cooking grate in place, cover gill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Brush the fish on both sides with the oil and season with the ancho powder and salt. Place the fillets on the grill over medium-high heat and cook until golden brown and slightly charred, 3 to 4 minutes. Using a spatula, turn the fish over and continue grilling until just cooked through, 3 to 4 minutes longer. Remove the fish and let rest for 5 minutes before shredding into bite-sized pieces.

    While the fish is resting, wrap the tortillas in foil and place on the grill for 5 minutes to warm through.

    Lay the warm tortillas on a flat surface and drizzle with some of the chipotle crema. Top with fish, cabbage, onion, cilantro, and salsa. Fold and eat with a squeeze of lime juice.

Ingredients

  • 1 pound sweet Italian sausage
  • 3/4 pound lean ground beef
  • 1/2 cup minced onion
  • 2 cloves garlic, crushed
  • 1 (28 ounce) can crushed tomatoes
  • 2 (6 ounce) cans tomato paste
  • 2 (6.5 ounce) cans canned tomato sauce
  • 1/2 cup water
  • 2 tablespoons white sugar
  • 1 1/2 teaspoons dried basil leaves
  • 1/2 teaspoon fennel seeds
  • 1 teaspoon Italian seasoning
  • 1 tablespoon salt
  • 1/4 teaspoon ground black pepper
  • 4 tablespoons chopped fresh parsley
  • 12 lasagna noodles
  • 16 ounces ricotta cheese
  • 1 egg
  • 1/2 teaspoon salt
  • 3/4 pound mozzarella cheese, sliced
  • 3/4 cup grated Parmesan cheese

Directions

  1. In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
  2. Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
  3. Preheat oven to 375 degrees F (190 degrees C).
  4. To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
  5. Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

Oven Baked French Fries Recipe

Serves 4

Ingredients:

4 Large potatoes
2 Tbsp. olive oil
1 tsp. salt
1/4 tsp. paprika
Pepper to taste

Directions:
Preheat oven to 450 degrees. Prepare the potatoes by washing and peeling them and cut the potatoes lengthwise.  Move the baking rack in the oven to the highest position.  Pam the baking rack up (not too much).  Mix the essentials...olive oil or vegetable oil, salt, paprika and pepper. Put cut up potatoes into the bowl with the aforementioned ingredients and coat the potatoes.

Spread oil coated potatoes on a baking sheet and bake for 20 minutes on top rack of oven. Turn potatoes. Cook an additional 10-15 minutes, or until golden brown.

TACO Pizza Recipe
Ingredients -
½ lb Vegetarian Sausage (or other kinds of sausage depending on your preference.)
1 ¼ cups cornmeal
2 cups chopped lettuce
½ cup sliced olives
¾ cup water
⅔ cup milk
1 ½ teaspoons salt
1 cup shredded Monterey Jack cheese
2 teaspoons baking powder
14 ½ oz can diced tomatoes in juice
1 envelope taco seasoning mix
1 ¼ cups all purpose flour
1 ½ cups shredded cheddar
½ cup sliced green onions
1 cup diced fresh tomatoes
6 oz tomato paste
⅓ cup melted butter

 
Preparation:
Preheat the oven to 400 degrees F.
Mix together the salt, baking powder, cornmeal and flour.
Add the milk and blend well.
Press this mixture over the sides and base of a 14 x 12 inch baking pan.
Bake for 10 minutes then let it cool.
Brown the sausage and beef in a skillet and drain off the fat.
Stir in the water, taco seasoning, canned tomatoes and tomato paste and bring the mixture to a boil.
Let it simmer for 5 minutes without a cover. Spread this mixture over the pizza crust.
Mix the cheddar with the Monterey Jack cheese and sprinkle 2 cups of this cheese mixture over the pizza.
Bake it for 15 minutes or until the cheese has melted.
Top the pizza with the fresh tomato, olives, onions, lettuce and the last bit of cheese.

Flank Steak with Parsley-Garlic Sauce
Cost: $15.00

(Serves 3)
Ingredients:
1 1/2 pounds flank steak
Coarse salt and ground pepper
1 tablespoon plus 1/4 cup olive oil
1 to 2 cloves garlic
1 bunch flat-leaf parsley, stemmed (about 4 cups)
3 tablespoons fresh oregano leaves
3 tablespoons white-wine vinegar
1/8 teaspoon red-pepper flakes

Directions:
Heavily coat both sides of the flank steak with salt and pepper. Heat up one tablespoon of oil in a large skillet over medium heat. Cook steak for about 5 minutes for medium-rare, few minutes longer for medium. Transfer to a cutting board, let it rest for a few moments and then slice against the grain.
In the meantime, chop garlic until fine. Also chop parsley until fine, add oregano, vinegar, pepper flakes, ¼ cups of oil, 2 tablespoons of water and ½ teaspoon of salt. Serve the mixture over the steak.

Broken Noodles in Tomato Sauce and Ricotta

Ingredients:

4 cups homemade or store-bought marinara sauce

1 package (9 ounces) pappardelle (wide pasta), broken into large pieces or you choose any pasta you like.

Coarse salt and ground pepper

1/2 cup part-skim ricotta

1/2 cup fresh basil leaves

Directions:

In a large saucepan, bring sauce and 2 cups water to a boil; reduce to a simmer. Add noodles, and simmer, stirring frequently, until tender, 6 to 8 minutes. Season with salt. Serve with a dollop of ricotta, basil, and pepper.

Even better are fortified eggs, which provide essential Omega-3 amino acids for when you don’t have time to, say, grill a salmon fillet for breakfast.
On the go: egg and cheese sandwich (on wheat if that’s an option).

- Fruit. At home, a packet of a superfruit[SF1] (see sidebar) soy protein smoothie such as Fruitein Exotic Red Fruit Shake (Naturesplus.com) is easy to mix – no blender needed – surprisingly delicious, and supercharged with a bazillion antioxidants (according to our estimates). You can get an even greater protein kick by adding skim milk instead of water. If you do use a blender, add some fresh fruit; berries and citruses provide glucose – which is drained in mental activity – and extra hydration which combats cognitive impairment.
On the go: order a smoothie with fruit and yogurt or nonfat milk, instead of just juice. If add-ins are an option, go for a B-vitamin and/or protein supplements.

To maintain energy levels and mental alertness all day:

1. Hydrate with plenty of water.

2. Load up on Omega-3 fats (fatty fish, Omega-3 fortified eggs, ground flaxseeds, and walnuts).

Recipe : Broiled Salmon in Spinach and Feta......





Broiled Salmon in Spinach and Feta

Cost: $ 15.00

Time: 15 minutes

(Serves 2)

Ingredients:

2 skinless salmon fillets (6 ounces each)

Coarse salt and ground pepper

1 tablespoon olive oil

2 bags (5 ounces each) baby spinach

1/2 cup feta, crumbled (2 ounces)

1/3 cup pine nuts

2 teaspoons fresh lemon juice

Directions:

Heat broiler, with rack set 4 inches from heat. Place salmon on a rimmed baking sheet; season with salt and pepper. Broil until opaque throughout, 5 to 7 minutes.
Meanwhile, in a large skillet, heat oil over medium. Add as much spinach as will fit; season with salt and pepper. Cook, tossing spinach and adding more to skillet as space becomes available, until tender, about 2 minutes. Remove from heat; drain off excess liquid. Stir in feta, pine nuts, and lemon juice. Serve salmon with spinach saute.

4)Stop complaining out loud. Nobody likes a whiner.

5)Keep an accomplishment log highlighting what you’ve accomplished in the past, as well as goals that can be accomplished in the future.

6)Stay away from questionable websites during work hours. Better off, cut your surfing time to a minimum.

7)Refill the photocopier's paper tray and replace the roll of toilet paper in the office’s bathroom. Your co-workers will like you and word will spread.

Work attire: What's in versus what shouldn't have existed in the first place.

How do you navigate the line between too hip and too stuffy in your work wardrobe? We consulted Janis Moore-Campbell, Associate Director at the Center for Professional Development at Temple University, for new ways to bring the traditional professional look up to date.

What's in for girls
1. Headbands. Silk-covered or leather headbands look pulled-together, conservative and stylish all at once.

2. Modest and feminine blouse. Unless you're a flight attendant, a starched white blouse can be a bit harsh. Consider a cream-colored silk blouse instead.

3. Cropped jackets or blazers are perfectly acceptable for work attire.

4. A cardigan and matching shell, with a belt at the waist, is structured enough to replace a blazer in most work environments.

5. Tulip skirt. A slight flare at the hem of a skirt is both classy and modern.

6. Wrap dress. Consider the wrap dress a gift from fashion heaven. With just one
piece, it's easy to wear and comfy all day.

7. Nude nylons. If you're wearing a skirt, nylons are a must, even in summer. While you might want to stick with basic nylons for interviews, it's perfectly acceptable to add some pizzazz with tiny patterns in subdued colors for everyday.


What's in for guys
1. Take it easy on the gel. It's 2010 ... it's time to trash the hair gel. Use a dab of pomade for a look that's combed, under control and not too stiff.

2. Solid tie. Do wear a tie, but don't mess around with patterns. Make it easy on yourself by picking a solid color. Need help tying? Visit: Tie-a-tie.net

3. Mixed patterns. When you're ready to take it to the next level, wear a striped tie with a checked shirt. This look works when the tie and shirt share one shade.

4. Ditch the jewelry. Few workplaces outside of creative fields allow earrings for males. This presents a difficult situation for those who have stretched lobes. You can avoid droopy ears with "hider plugs," which have a matte rounded front made from implant-grade silicone and a hollow back.

5. Flat-front pants. A single crease is all you need anymore.

6. Invest in leather lace ups. Loafers are too casual, wing-tips are often to formal -- lace ups can be dressed up or down.

7. Spit shine those kicks. Guess what? It works. Spit, polish and repeat.

Chicken Club Salad

Cost: $12.00

Time: 20 minutes

(Serves 2)

Ingredients:

6 slices turkey bacon


4 boneless, skinless chicken breast halves (6 to 8 ounces each)

coarse salt

ground pepper

3 plum tomatoes, quartered lengthwise, seeded, and cut into 1/2-inch pieces

1/2 small red onion, finely chopped

2 celery stalks, sliced crosswise 1/4 inch thick, plus 1/2 cup celery leaves (optional)

1/2 cup light mayonnais
1 tablespoon white-wine vinegar

lettuce leaves

Directions:
Preheat oven to 400. Line a rimmed baking sheet with aluminum foil. Lay each link of turkey bacon on the sheet; bake until it begins to render its fat. Turn bacon over, and slide to one side of sheet. Season chicken with salt and pepper, and place on baking sheet. Bake until bacon is browned and crisp and chicken is cooked through, roughly 15 minutes.
Transfer bacon to a paper-towel-lined plate, and let drain; crumble. Let chicken cool completely. Meanwhile, in a large bowl, combine tomatoes, onion, celery, celery leaves (if using), mayonnaise, and vinegar.
Cut chicken into 1/2-inch chunks, and add to bowl. Season with salt and pepper, and toss to coat. Serve chicken salad over lettuce leaves, and sprinkle with bacon.

INSIDE HER MIND !! 17 THINGS WOMEN WANT MEN TO KNOW !! READ ON !!




I love, love, love when you:

1. Do really over the top, ridiculous things for love. Such as that time you ripped flowers out of the planter on someone's doorstep, and handed them to me dirt, roots and all. 

2. Listen to me. 

3. Give me good advice about whatever work-, money- or girlfriend-related issue is stressing me out. It shows me you're listening, you sympathize and you want to help me get happy.

4. Ask for my opinion.

5. Ask me to dance! When you hold me close and sway, I melt.

6. Wake me up with sex. Good Morning! 

7. Get a little jealous of other guys in my life. The key here being "little." I'll pass on the bar brawls, thanks.

8. Tell me your friends think I'm beautiful.

9. Get curious about my past. Some things I'll never tell, but it never hurts to ask.

10. Don't notice my bad hair days or accidentally mismatched outfits.

11. Do notice the good hair days, and tell me when I look great. I need to hear that stuff more often than you may think. 

12. Kiss the back of my neck really slowly and softly.

13. Bring surprises. Even small things. My girlfriend still talks about the guy who brought her back a York peppermint patty every time he went out to the store.

14. Dress up. I love your favorite flannel shirt as much as you do (well, maybe not quite as much ...), but do you have any idea how hot you look in a suit?! 

15. Want to lock out the rest of the world and spend the day together indoors.

16. Put up with my fussing over menus and food labels. It's just my way of keeping my butt the way you like it.

17. Just call to say you love me. Bonus points when you sing the song, too. 


RECIPE : TUNA CAKES !! ENJOY!!




Tuna Cakes

Cost: $14.00

Time: 10 minutes

(Serves 4)

Ingredients:

3 cans (6 ounces each) tuna in olive oil, drained and flaked

1 large egg, lightly beaten

1/2 cup fresh cilantro, coarsely chopped, plus sprigs for garnish

1/3 cup plain dry breadcrumbs

2 tablespoons light mayonnaise

1 tablespoon fresh lemon juice

1 tablespoon olive oil

1/2 cup prepared salsa

Directions:

In a large bowl, stir together tuna, egg, cilantro, breadcrumbs, mayonnaise and lemon juice. (You can also add a drop of your favorite hot sauce.)Mix gently until ingredients just hold together.

Using a packed 1/3-cup measure of tuna mixture per patty, shape into 8 cakes.
In a large nonstick skillet, heat oil over medium. Cook cakes until golden brown and crisp on the outside, about 2 minutes each side. Serve hot, accompanied by salsa, and garnish with cilantro sprigs.
